Jérôme Prevost's single vineyard Champagne is made from old Pinot Meunier vines from their 2 ha plot "Les Béguines", planted in 1960. Low yield, 45 hl/ha, manual harvest, as late as possible, and first fermentation in old 400 to 600-litre Burgundian barrels. No yeast or sugar added. The wines are bottled in July and stay on lees for 24 months. Depending on the release, La Closerie may be labeled as Extra Brut or Brut Nature but it is always Non-Dose. Although vintage is not written on the bottle, uses a code instead, they are always a vintage Champagne.
Jerome Prévost's Champagnes has the authenticity of the terroir and the vintage of the highest quality. An intense and elegant nose with hints of brioche, citrus and notes of fresh hazelnut. The palate is creamy, full-bodied, balanced and elegant. Intense flavours of lemon peel, exotic spices and toast. This is a rich and powerful style of Champagne with a long dry finish.
